Recipe: Pico de Gallo

Pico de gallo translates to "rooster's beak" and it's believed this name comes from the small size at which the vegetables are cut. This condiment also has another name, "salsa mexicana", because it has the three colors of the Mexican flag: red, white, and green. Serve on nachos, tacos, or fajitas.

Ingredients

3 medium tomatoes
1 small onion
1 hot pepper
1/2 bunch parsley (or cilantro)
juice from 1/2 lime
salt, pepper

How to prepare pico de gallo

  1. Cut the tomatoes in half and remove the seedy part. Dice the tomatoes into small cubes.
  2. Finely chop the onion, hot pepper, and parsley as well.
  3. Season with salt and pepper to taste.
  4. Pour the lime juice over the vegetables and toss gently.
  5. Let it sit in the refrigerator for 30 minutes to allow the flavors to combine and for it to be nearly covered by its own juice.
