Aromatic cabbage stir fry. Cheap but delicious.
I started from the idea of sesame rice which I adore, and wanted to enrich it a bit to transform it from a side dish into a standalone meal.
Ingredients
1 small cabbage (about 700g)
1 medium onion (about 150g)
2 tablespoons sesame seeds
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/4 teaspoon chili flakes (I used pul biber)
1/8 teaspoon ground fennel seeds
1 pinch ground cinnamon
1 pinch ground cloves
1/2 teaspoon salt
2-3 tablespoons oil
50g rice
Servings: 2
How to prepare sautéed cabbage with sesame and rice
- Cut the cabbage into thin strips and sprinkle with salt. Knead it until it softens a bit, then let it sit until needed.
- Chop the onion. In a wide pan (about 24 cm), heat the oil and sauté the onion until very soft (about 5 minutes). Add the sesame seeds and let them fry for another 3 minutes.
- Add all the spices and stir until evenly distributed (about 1 minute).
* With the indicated amount of chili, the dish turns out medium spicy; adjust if you want it less hot - Turn the heat to medium. Add the cabbage and sauté everything for 10 minutes, stirring frequently so it doesn't burn. If you feel the cabbage is caramelizing too much or too fast, you can lower the heat a bit. While sautéing the cabbage, taste it for salt and add more if necessary.
- Add the cooked rice (according to package instructions) and mix well.
