Savory Herb Loaf

Ingredients

240 g all-purpose flour
4 eggs (not too large)
150 ml milk
100 ml oil
150 g hard cheese (goat)
2 small carrots (about 100 g)
1/2 bunch parsley
3 green onion stalks
2 dill sprigs
1 small tarragon sprig
1 packet baking powder (10 g)
1 teaspoon salt
1/4 teaspoon ground black pepper
a little butter or oil (for greasing the pan)

How to prepare savory herb loaf

  1. Sift the flour with the salt, pepper and baking powder.
  2. Grate the carrots. Chop all the herbs as finely as possible (from green onions use only the green tails, not the white part). Grate the cheese.
  3. In a bowl, beat the eggs very well (you can use a mixer). Add half of the milk. Add half of the flour and mix with a whisk. Add the rest of the milk and then the rest of the flour.
  4. Continue to mix with the whisk while pouring in the oil, until you incorporate it all.
  5. Add the carrots, herbs and cheese and mix with a spoon until smooth.
  6. Pour the loaf mixture into a pan (25 x 10 cm) greased with butter or oil. Level with a spoon.
  7. Bake the loaf at 180C for 45 minutes.
