I finally had time to make pljeskavica, I had been planning to for a long time and it is not very difficult, even if you want everything to be "homemade". The important thing is to plan everything well. So the day before yesterday I made the ajvar and the buns, and yesterday I grilled the burgers. The result? I can tell you it was worth the effort, I would make them again and again...
Ingredients
500g ground meat (beef or a mix of pork and beef)
1 large garlic clove
1 small onion (about 30g)
1/4 bunch parsley
4 tablespoons sparkling water
1 teaspoon pepper
1 teaspoon sweet paprika
salt
For serving:
5 burger buns (lepinje)
1 portion red pepper spread (ajvar)
1 large red onion, finely chopped

How to prepare serbian burger (pljeskavica)
- Chop the onion very very finely. Crush the garlic. Finely chop the parsley.
- Mix all the burger ingredients except the water and knead well.
- Add the water and knead as much as you can, at least 5 minutes.
- Cover the burger mixture with plastic wrap and refrigerate for a few hours (I left it for about 5 hours).
- Heat the grill and grease it with a piece of bacon fat.
- Divide the meat mixture into 10 pieces. Shape each piece into balls.
- Place a plastic bag on the table and wet it with your hand so the meat does not stick. Place a meat ball on it, cover with another bag, and press firmly with a wooden board to flatten the burger, it should come out thin. Remove the top bag and using the bottom bag flip the burger onto your palm. Flip it onto the hot grill. Repeat until the grill is full.
- Let it grill for about 5 minutes (on an electric grill) or until browned, then flip and let it brown on the other side too, also about 5 minutes.
- Assembly: cut a bun in half, spread generously with ajvar. Sprinkle with finely chopped onion, place two burger patties and sprinkle more onion. And now the part I like: put the assembled pljeskavica on the grill, 1 minute on each side, to warm it up a bit and make the bun crust crispy again.
