Spinach with Feta Cheese

In India, this is called Palak Paneer, a very beloved vegetarian dish.
Ingredients
500g spinach
300g mild feta cheese (unsalted; or tofu for a vegan version)
2 cloves
1 piece cinnamon (2 cm)
1/2 cardamom pod
1 dried hot pepper
2 teaspoons ginger and garlic paste
2 garlic cloves
2 heaping tablespoons onion paste
1 level teaspoon cumin
1 heaping teaspoon ground coriander
1/2 teaspoon turmeric
100ml passata
3 tablespoons oil
salt

How to prepare spinach with feta cheese
- Clean and wash the spinach. Put it in a pot of boiling water and let it cook for 1-2 minutes. Remove with a slotted spoon into a blender (leave some water on it, don't drain it too much) and blend until it becomes a paste.
- Prepare the masala: put the cloves, cinnamon, cardamom seeds, and hot pepper (with or without seeds) in a mortar and grind until they become powder.
- Heat the oil, add the masala and sauté for a few seconds. Add the ginger-garlic paste and crushed garlic cloves and sauté for 30 seconds.
- Add the onion paste, spices (cumin, coriander, turmeric), and passata. Mix everything and let it cook for 3 minutes.
- Add the spinach, 100ml of the water it was boiled in, and salt to taste. Simmer covered over medium heat for 30 minutes. Check if it's reducing too quickly and add a little more water if necessary.
- Turn off the heat and add the cubed feta cheese to the dish. Let it rest for 5 minutes.
