Spinach and Artichoke Gratin

This warm, creamy, and healthy appetizer is very quick to prepare. Just make sure to toast plenty of bread on the side.
Ingredients
200g fresh spinach (or 100g frozen spinach)
150g artichokes in oil (about 8 hearts)
1 small bunch green onions (chives)
200ml heavy cream for cooking
50g parmesan
1 tablespoon oil
salt, pepper

How to prepare spinach and artichoke gratin
- Sauté the spinach in hot oil just until the leaves wilt. If using frozen, just thaw it in advance. Drain the water by squeezing in cheesecloth. Chop finely.
- Blend the artichokes in a blender until finely chopped.
- Add the spinach, finely chopped green onions, cream, and finely grated parmesan. Mix well. Season with ground black pepper and salt to taste.
- Put this mixture in an oven-safe dish and bake at 200°C (390°F) for 20 minutes. Then turn on the broiler and leave for a few more minutes to brown a little on top.
- Serve with toasted bread.
