Recipe: Steak Tartare

A recipe that doesn't sound great at first read, since it involves raw meat, but if you work up the courage to try it, I'm sure you'll love it.

Ingredients

200 g beef tenderloin
2 cornichons (very small gherkins)
1 heaping tablespoon finely chopped red onion
1 teaspoon capers
1/2 bunch parsley
1 egg yolk
60 ml oil
2 teaspoons mustard
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
salt, pepper

How to prepare steak tartare

  1. Finely chop the meat using a knife, not a food processor or meat grinder.
  2. Put the egg yolk in a bowl with a teaspoon of mustard. Add the oil in a thin stream, stirring constantly until you finish it. You'll get a thin mayonnaise.
  3. Add the remaining mustard, Worcestershire sauce, and lemon juice to the mayonnaise, and season with salt and pepper. Mix well.
  4. Add the mayonnaise to the meat and mix well.
  5. Very finely chop the cornichons, onion, capers, and parsley. Add to the meat and mix again.
  6. Taste and adjust the salt, pepper, and lemon juice to your liking.
  7. Serve with toasted bread and a raw egg yolk on top (if desired). I stuck with just toasted bread.
