Steak Tartare

A recipe that doesn't sound great at first read, since it involves raw meat, but if you work up the courage to try it, I'm sure you'll love it.
Ingredients
200 g beef tenderloin
2 cornichons (very small gherkins)
1 heaping tablespoon finely chopped red onion
1 teaspoon capers
1/2 bunch parsley
1 egg yolk
60 ml oil
2 teaspoons mustard
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
salt, pepper

How to prepare steak tartare
- Finely chop the meat using a knife, not a food processor or meat grinder.
- Put the egg yolk in a bowl with a teaspoon of mustard. Add the oil in a thin stream, stirring constantly until you finish it. You'll get a thin mayonnaise.
- Add the remaining mustard, Worcestershire sauce, and lemon juice to the mayonnaise, and season with salt and pepper. Mix well.
- Add the mayonnaise to the meat and mix well.
- Very finely chop the cornichons, onion, capers, and parsley. Add to the meat and mix again.
- Taste and adjust the salt, pepper, and lemon juice to your liking.
- Serve with toasted bread and a raw egg yolk on top (if desired). I stuck with just toasted bread.
