Recipe: Beef Fajitas

For those who've seen it here before: this isn't new - I've posted this recipe before, but now I've managed to improve it and decided to repost it. If you see very old comments, you'll know why they're here 😉 This version is much better and much closer to the original.

This is a Mexican recipe meaning grilled meat served in a tortilla and seasoned with grilled onions and peppers. Originally only beef was used, but now you can also use chicken, pork, or even seafood.

If you want to make fajitas on an outdoor grill, grill the meat directly after seasoning, and put the onions and peppers in well-sealed aluminum foil packets, then place them on the grill.

Ingredients

700 g veal/beef (preferably tenderloin)
3 onions (I used red onion, but it's not required)
3 bell peppers (green and red, for color)
2 tablespoons Mexican spice blend
1/2 teaspoon pepper
sea salt
5 tablespoons oil + a little oil for the grill
6 tortillas (or small flatbreads or roti)

Servings: 6 fajitas

How to prepare beef fajitas

  1. Cut the beef into slices perpendicular to the grain, slightly thicker than a finger, and prepare with sea salt following the recipe here. Follow all the instructions from mixed grill to achieve good grilled beef. Before grilling, season the meat with Mexican spice blend on both sides.
  2. Cut the onions and peppers into not-too-thin slices. Put them in a bowl (or bag) and pour over them 1 tablespoon Mexican spice blend, pepper, and oil. Mix well. Refrigerate while the meat sits with the salt.
  3. Brush the hot grill with a drop of oil and cook the meat on both sides for 3 minutes per side (it will be slightly rare in the middle). If you don't want it rare, increase the cooking time by 1 minute. When the meat cools slightly, cut it into strips.
  4. In the same grill pan where you cooked the meat, add the vegetables and cook, stirring occasionally, until done but not too soft, about 15 minutes over medium heat.
  5. On each tortilla (I used roti), place grilled onions and peppers, then beef strips. You can serve simply, with sour cream, or guacamole.
