I designed today's recipe as a "roast for two," remembering that Valentine's Day is approaching. It's for two in terms of quantity, preparation time, and presentation. The result will make you feel like you're in a five-star restaurant. Tomorrow I'll post the gorgonzola sauce recipe that goes well with this roast and is also quick to prepare... because I don't want lovebirds to be tired after cooking my recipes 😉 Until then, you might also consider the Argentine sauce to accompany this roast.
Ingredients
500g aged ribeye or beef tenderloin (4.5 cm thick)
coarsely ground black pepper
a little oil
salt
How to prepare beef roast
- Salt the meat the evening before to enhance the flavor and increase juiciness.
- The next day, take it out of the refrigerator and sprinkle generously with black pepper. Oil your hands and massage the meat on all sides until well coated. Let it sit at room temperature for about 1 hour.
- Heat a grill pan (without adding fat) for 3 minutes over high heat.
- Sear the meat on one side for 4 minutes. Flip it and cook for another 2 minutes on the other side. Remove the pan from heat and flip the meat once more.
- Put the pan with the meat in the oven at 200C (400F) for 10 minutes.
* if your grill pan cannot be used in the oven, transfer the meat to a hot oven-safe pan
* in the 10 minutes in the oven, the meat will cook, remaining slightly rare (exactly as shown in the photo); if you want it more or less done, just increase or decrease the oven time slightly - Remove the pan from the oven and let the roast rest for 5 minutes (mandatory). Then it can be sliced, (attention!) perpendicular to the grain.
- Serve the beef slices with a sauce of your choice.
