Upside-Down Spinach and Ham Pie

I found such beautiful spinach at the market yesterday! Perfect for a pie-sandwich.
Ingredients
Dough
500 g all-purpose flour (BL55)
125 ml warm milk
180 g yogurt (full-fat)
1 egg
25 g fresh yeast
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1 pinch sugar
Filling
350-450 g fresh spinach
6 green onion stalks
6 sprigs dill
1 small bunch parsley
300 g sliced ham
4 tablespoons oil
salt, black pepper

How to prepare upside-down spinach and ham pie
- Dissolve the yeast in 50 ml warm milk with sugar. Let it sit in a warm place until foamy (about 15 minutes).
- Add the ingredients to the bread machine in the following order: remaining milk, egg, yogurt, yeast mixture, flour sifted with salt and baking powder. Set the machine to the knead+rise program.
- Clean the spinach by removing stems and wash thoroughly. Drain very well - I used a salad spinner, but if you don't have one, spread the spinach on paper towels to drain. If the leaves are large, you can chop the spinach for easier layering in the pan. Place the spinach in a bowl and sprinkle with salt. Chop the herbs. Let everything sit until the dough is ready. Just before using the spinach, check if it has released more water and if it's wet, squeeze it with your hands.
- For each pie, you need a 30 x 33 cm baking pan. Grease the pans with 2 tablespoons of oil each. Sprinkle half of the green onion in each pan. Then spread half of the spinach in an even layer. Sprinkle half of the dill and parsley on top. Add a little freshly ground black pepper.
- Cut the dough into two equal pieces. The dough is so elastic and non-sticky that you may not need flour on your work surface.
- Roll out each piece of dough to the size of the pan (30 x 33 cm). Roll the dough onto the rolling pin and unroll it over the spinach. Press the edges of the dough all around to tuck them in alongside the spinach. Gently press the dough over the spinach with your palms to settle it well.
- Let the pie rest for 30 minutes in a warm place (you can put it in a bag to protect it from drafts).
- Bake the pie at 200°C for 15 minutes. Using a large wooden board, flip the pie out of the pan with the spinach side up. Return the flipped pie to the oven for another 5 minutes to dry slightly on top.
- Let the pie cool down. Cut it in half along the longest side. Place ham slices on one half and cover with the other half.
- Cut the "sandwich" into pieces. It's delicious warm or cold.
