If you're craving a Turkish pizza but don't have time to knead dough, arayes is a quick alternative. And it's crispy.
Ingredients
500g ground meat (lamb or veal)
2 pita breads
2 tablespoons pine nuts
1 onion
3 level teaspoons baharat
1/4 teaspoon cumin
chili (optional)
1 tablespoon passata (or a small tomato, grated)
1 level tablespoon pepper paste
1/4 bunch parsley
3-4 mint leaves
1 tablespoon oil
salt
How to prepare arayes
- Sauté the finely chopped onion in hot oil.
- When softened, add the meat, baharat, cumin, and salt to taste. Fry until the meat is lightly browned. Drain most of the fat released by the meat in the pan. Taste the meat and add more salt if needed, and chili if you want it spicier.
- Add the pepper paste and tomato paste. Add the finely chopped herbs. Mix well and turn off the heat.
- Cut each pita bread into 4 pieces.
- Fill each quarter of pita with the prepared filling (about 2 tablespoons in each). Sprinkle with pine nuts. Gently press the top of the pita to stick to the meat.
- Brush the pitas with a little oil on top.
- Bake at 180°C (350°F) for 5 minutes, flip the pitas, and bake for another 5 minutes.
- Serve hot with yogurt and an onion salad.
