Light fritters that don't absorb any grease and are incredibly aromatic. Crispy on the outside and creamy on the inside from the feta cheese. What more can I say about them... I prepared them as a side dish with beer 😉, they disappeared from the plate in an instant, and besides beer, you can also prepare a serving of tzatziki alongside them.
Ingredients
500g zucchini
150g feta cheese
a few sprigs of dill
a few sprigs of parsley
2 green onions
2 cloves of garlic
1 egg
pepper
2-3 tablespoons breadcrumbs
1 tablespoon flour
oil for frying

How to prepare zucchini and feta fritters
- Peel the zucchini and grate them using the large holes of a grater. Don't grate the seedy center area. Drain them well by squeezing in your fist or in cheesecloth. Repeat this process several times as a lot of water will come out.
- Add the feta, finely chopped onion, dill, parsley, and crushed garlic to the drained zucchini. Season with a little pepper. Mix everything with a fork so that the feta crumbles and everything is well combined.
- Beat the egg well and add only half of it to the fritter mixture. Mix, then add the breadcrumbs and flour, one tablespoon at a time, until you can form balls from the mixture.
- Shape balls from the fritter mixture.
* you can keep the fritters in the refrigerator until you want to fry them - Heat plenty of oil and fry the fritters until golden. It won't take long, about 1-2 minutes, so watch the pan.
- Remove onto paper towels to absorb excess grease. Serve while still warm.
