Recipe: Pasta with Zucchini

A perfect duo: zucchini and wild garlic pesto. The spiciness and freshness of the pesto balances the sweetness of the fried zucchini, and the subtle garlic flavor complements the zucchini.

Ingredients

250g short pasta
3 small young zucchini
2-3 tablespoons wild garlic pesto
olive oil
salt, pepper

How to prepare pasta with zucchini

  1. Cut the zucchini into thin slices.
  2. Pour enough oil into a wide pan to cover the bottom well. Use olive oil as the zucchini will taste better. Heat the oil, then reduce to medium heat.
  3. Fry the zucchini slices in batches, so they are not crowded in the pan. Fry until lightly browned on the edges.
  4. Remove with a slotted spatula onto absorbent paper towels to drain the oil.
  5. When you've finished frying all the zucchini, sprinkle with salt and pepper to taste and wild garlic pesto. Mix until combined.
  6. Cook the pasta according to the package instructions. Drain and add 2 tablespoons of the pasta water over the zucchini.
  7. Add the pasta over the zucchini and mix well. Adjust salt.
  8. Serve with parmesan sprinkled on top.
