Recipe: Zucchini Salad

It's delicious served plain or as a side dish. I especially like it in the morning, next to an omelet.

Ingredients

1 young zucchini
a few sprigs of dill
1 green onion stalk
50g feta cheese
a few olives for garnish
salt, pepper

Marinade

3 tablespoons extra virgin olive oil (good quality)
1 tablespoon lemon juice
1 garlic clove
1 generous pinch of anchovy paste

How to prepare zucchini salad

  1. Grate the zucchini using a coarse grater and place it in a colander. Sprinkle salt over it, toss gently with your hand or 2 forks, and let it drain for at least 30 minutes. At the end, press it a bit to squeeze out all the water.
  2. Transfer the grated zucchini to a bowl and season with pepper. Add the chopped dill and green onion, and crumbled feta.
  3. In a small cup, crush the garlic with a little salt, add the oil slowly, like making mayonnaise, until it becomes a paste. Add the lemon juice and anchovy paste, and whisk well with a small whisk until it becomes a homogeneous emulsion.
  4. Pour the marinade over the zucchini and mix well. Refrigerate for a few hours to chill (even overnight), to allow the flavors to blend and the zucchini to marinate. When serving, garnish with olives and a bit more crumbled feta.
