Chicken Quesadilla

Quesadilla is a traditional Mexican dish. The basic recipe is simple: two tortillas with cheese between them, heated until the cheese melts. From here you can create any kind of quesadilla, depending on what else you add to the filling: chicken, beef, pork or vegetables.

1/4 cooked chicken (breast part recommended)
200g shredded cheese
10 tortilla wraps (or flatbreads)
Salsa
3 tomatoes
1 bunch green onion
1 bell pepper
1 tablespoon olive oil
salt, pepper, paprika
The vegetables can be used in 3 ways for the quesadilla, and of course other vegetables can be added:
- raw and diced small;
- roasted on the stovetop and cut into strips;
- or as salsa like I made
Topping: Tzatziki

How to prepare chicken quesadilla
- I started by making the salsa. I chopped the vegetables and cooked them with 1 tablespoon of olive oil and seasonings. Let it cook over medium heat for 10-15 minutes until the liquid from the vegetables evaporates, then I added 1 raw tomato diced and 4 stalks of green onion sliced into rounds, just so the salsa has a crunchier texture.
- While the salsa was cooking, I shredded the cheese and deboned the chicken (leftovers from chicken made with beer, lemon and rosemary)
- Then I prepared the tzatziki: I grated the cucumber on the large grater, squeezed the water out with my fist and mixed it with yogurt and chopped dill. Season with salt.
*The topping can be replaced with guacamole, which is traditionally served with quesadillas. Or you can just use sour cream. - I cut the flatbreads to fit my pan, since I could only find huge ones.
Now we start to assemble the quesadilla, with the heat under the pan at minimum. All layers should be thin so that in the end we have a thin quesadilla that can be eaten by hand without everything spilling out.
- place a flatbread in a pan greased with just a drop of oil. flip it every 10 seconds a few times, until you feel it starting to smoke a little, about 5-6 times.
- sprinkle cheese in a thin layer, leaving the edge free (2cm) so it doesn't reach the pan, otherwise the cheese will burn or leak out by the end
- spread 1 tablespoon of salsa with the back of a spoon in a thin layer
- sprinkle chicken pieces
- sprinkle a little more cheese
- cover everything with another flatbread and press down with your hand for a few minutes, 2-3 or so
- then flip the quesadilla (it flips easily) and leave it on the other side for 2-3 minutes, until you feel it smoking slightly again. - Remove from pan, cut into 4 and serve with tzatziki.
