Chicken Easter Recipes Meat Dishes Lamb Arabic Sandwiches
Shawarma is a sandwich typical of the Middle East. Each country in that region has its own version, but the one I'm presenting is from Syria, inspired by the book "Saha" whose introduction was written by the famous Anthony Bourdain.
The ingredients are fresh, aromatic, and light - it doesn't contain, as you might expect, ketchup, mayonnaise, french fries, or other ingredients typical of modern fast food.
And although traditional shawarma meat is prepared on a vertical grill, it can easily be made at home without that equipment, simply using leftover roast meat from dinner. I recommend trying this combination especially for Easter, when you can use leftover lamb roast.
I know... you might protest: what's an Arabic recipe doing in the "Easter Recipes" category? Well, this is my suggestion for using leftovers, and although it's not a Romanian recipe, I think it's the ideal choice, especially if the weather is nice - God willing, spring will come to us too! - and you're planning a picnic.
Ingredients
leftover roast meat (lamb or chicken or a mix of both)
2-3 tomatoes
5 flatbreads
Salad
1 cucumber (approx 100g)
3 green onion stalks
3 lettuce leaves
a few dill sprigs
1/2 coffee cup couscous
2 tablespoons olive oil
300g full-fat yogurt (6%)
Servings: 5
How to prepare shawarma
- Cut the roast into thin strips.
- Finely chop the vegetables and dill for the salad.
- Place the couscous in a bowl, pour 1/2 cup of boiling water (enough to just cover it) and let it sit for 5 minutes. The liquid should be completely absorbed.
- Add the oil to the couscous and mix with a fork until the grains separate.
- Mix the vegetables with the couscous and pour the yogurt on top. Mix well and salt the salad.
* In my salad, I only used half the amount of yogurt required because I ran out, but normally the salad should have more sauce, almost like tzatziki - On each flatbread, place strips of meat, then a few spoonfuls of salad, and tomato slices on top. Roll the flatbread like a crepe and cut in half, slightly diagonal for a nice presentation.
