This Turkish-origin salad-condiment can be served alongside many Turkish dishes - Turkish pizza, kebab, kofte - but it's so good that you'll probably pair it with other dishes too.
By soaking the onions in cold water, their sharp and strong flavor is reduced, bringing out their sweetness. You can use this technique in other salads where you add raw onion. And if you soak a halved onion in cold water, you won't tear up when chopping it. It works!
Ingredients
2 onions (white, red, or a mix)
5 sprigs parsley
1 level teaspoon sumac
salt
How to prepare onion salad
- Cut the onions in half and then into thin slices. Place them in a bowl with cold water and salt. Let them sit for 10 minutes. This step helps reduce the sharpness and strong flavor of the onions while enhancing their sweetness.
- Chop the parsley.
- Drain the onions well and then place them on kitchen towels to absorb as much moisture as possible. Taste to see if they're salty enough.
- Place the onions in the salad bowl, separating them into thin rings. Sprinkle a little salt if you found at step 3 that they weren't salty enough. Add the parsley and sumac. Toss gently.
