Flatbread + Greek salad + chicken = yummy
I used leftovers from a beer can chicken which I combined with a Greek salad with tzatziki and put them in a flatbread for easier eating. From the Greek salad, I omitted the peppers - you already know why - but they can be added.
Ingredients
1/4 grilled chicken
1 large tomato
3 small cucumbers
200g olives
1 onion
3 slices feta cheese (or similar white cheese)
tzatziki (made from 300g yogurt and without garlic)
3 tortillas (or large flatbreads)
oregano

How to prepare greek quesadilla
- Prepare tzatziki following the recipe here.
- Debone the chicken and cut into small strips. Cut the vegetables into rounds. Chop the olives finely.
- Take a flatbread and spread it with tzatziki. On one half, sprinkle the chicken strips. On top, arrange the tomato, cucumber, and onion rounds and sprinkle with olives. Crumble a slice of feta cheese over the vegetables and season with a little oregano. Do not add salt because the olives and feta are already salty.
- Fold the empty half of the flatbread over the filled half and press lightly to stick. Cut into 4 and serve immediately.
