Recipe: Greek Quesadilla

Flatbread + Greek salad + chicken = yummy

I used leftovers from a beer can chicken which I combined with a Greek salad with tzatziki and put them in a flatbread for easier eating. From the Greek salad, I omitted the peppers - you already know why - but they can be added.

Ingredients

1/4 grilled chicken
1 large tomato
3 small cucumbers
200g olives
1 onion
3 slices feta cheese (or similar white cheese)
tzatziki (made from 300g yogurt and without garlic)
3 tortillas (or large flatbreads)
oregano

Servings: 3

How to prepare greek quesadilla

  1. Prepare tzatziki following the recipe here.
  2. Debone the chicken and cut into small strips. Cut the vegetables into rounds. Chop the olives finely.
  3. Take a flatbread and spread it with tzatziki. On one half, sprinkle the chicken strips. On top, arrange the tomato, cucumber, and onion rounds and sprinkle with olives. Crumble a slice of feta cheese over the vegetables and season with a little oregano. Do not add salt because the olives and feta are already salty.
  4. Fold the empty half of the flatbread over the filled half and press lightly to stick. Cut into 4 and serve immediately.
