Baked Green Beans with Pork Tenderloin

A very light dish: green beans are very low in calories (only 30 calories per 100g 😉 ), and pork tenderloin has as many calories as skinless chicken breast. Plus, pork tenderloin is very tender, and prepared this way it melts in your mouth. I love how the taste of pork pairs with green beans.
Ingredients
1 pork tenderloin (approx. 400-450 g)
800 g green beans
1 large onion
2 large garlic cloves
3 small tomatoes
1 tablespoon tomato paste
1/2 tablespoon pepper paste
1 sprig of thyme (or 2 sprigs of wild thyme)
2-3 sprigs of dill
4 tablespoons oil
salt, black pepper

How to prepare baked green beans with pork tenderloin
- Trim the ends off the green beans and cut into segments. Mix with finely chopped dill and a little salt. Score the tomatoes with an X and blanch in boiling water for 15 seconds. Remove and peel. Cut into slices.
- Heat 2 tablespoons of oil in a pot (wide enough for the meat slices to fit in a single layer) and sauté the finely chopped onion until softened (about 10 minutes).
- Add the tenderloin, sliced not too thin, and fry on both sides until they change color and start to brown slightly.
- Add the crushed garlic and pastes (tomato and pepper), sprinkle with salt and grind black pepper. Mix until the meat is coated. Sprinkle chopped thyme on top (if using wild thyme, pull the leaves off the stems with your hand and sprinkle directly over the meat).
- Arrange the green beans over the meat. Place the tomato slices over the green beans. Sprinkle with a little salt and the remaining oil. Pour 250 ml water around the edge of the pot.
- Bring the pot contents to a boil and cover. Bake at 180°C for 45 minutes. Then remove the lid and continue baking until the sauce reduces and the beans are fully cooked (approximately 15 more minutes). It's excellent reheated.
