Green Beans with Garlic

In terms of market offerings, this is my favorite time of year. Peas and green beans are the vegetables I eagerly await each year, and here they both are. Green beans prepared this way are normally a side dish, but I confess I usually don't feel the need for any meat and just eat them on their own.
Regarding cooking green beans, it's important to cook them enough until they develop that pleasant bean flavor, meaning they're no longer grassy. From there, it's a matter of taste - some like them to remain slightly crunchy (which preserves their shape and color), others prefer them a bit more cooked and fully softened (which slightly changes the color to khaki). Cook them however you like.

Ingredients
400 g green beans
2 garlic cloves
1 tablespoon olive oil
1 tablespoon butter
2 generous teaspoons dill pesto
2 sprigs parsley
salt, black pepper

How to prepare green beans with garlic
- Trim the ends off the green beans. Wash well, then take bunches of beans, line them up on the work surface, and cut into 2 or 3 segments.
- Put the oil, 100 ml water, and beans in a pot. Sprinkle with salt and black pepper. Bring to a boil, reduce heat to almost low, and cover. Simmer for 20 minutes, stirring once during this time. At the end, the beans will be cooked but still al dente (if you like them more done, continue simmering with the lid on) and there will be a little liquid left at the bottom of the pot.
- Remove the lid, add the crushed garlic and butter, and increase heat to medium. Cook, stirring frequently, until all the water at the bottom of the pot has evaporated (it doesn't take long, about 2 minutes). You'll smell the sweet aroma of hot butter, and at that moment, remove the pot from heat so you don't burn the butter.
- Add the dill pesto and chopped parsley. Mix well so everything is infused with these flavors. Adjust salt to taste.
- Serve immediately as a side dish alongside a beef or pork steak.
