Bulgur Pilaf with Beef
A really great recipe, you'll love it, especially if you're a bulgur fan (you can't see me, but I raised both hands!).
You can find coarse bulgur in supermarkets, at the organic products section or in organic stores. I've also included a comparison photo with coarse bulgur (used in this recipe) and fine bulgur (which is prepared only by soaking).
Ingredients
150g coarse bulgur
300g ground beef (or lamb; or mixed)
1 large onion
1 tablespoon tomato paste
1 tablespoon sweet pepper paste
1 teaspoon hot pepper paste
1 teaspoon Turkish spice blend
2 tablespoons oil
salt

How to prepare bulgur pilaf with beef
- Sauté the chopped onion in oil until very soft.
* you can also add a diced green pepper along with the onion - Add the ground meat and sauté, stirring occasionally until it changes color and the released juices evaporate.
- Add the pastes (tomato and pepper) and the spice blend and mix well. Get ready, an amazing smell will now rise from the pot 😉 Sauté for another 5 minutes, until the paste starts to lightly caramelize on the bottom of the pan.
- Add 600ml hot water and salt. Bring to a boil and cover. Reduce heat to low. Simmer for 20 minutes.
- Wash and drain the bulgur. Add it over the meat, adding a little more salt. Cover and let it simmer on low heat for 10 minutes. Turn off the heat and let it rest, without lifting the lid, for another 10 minutes. Adjust salt to taste.
- Serve warm with 1 tablespoon of Greek yogurt and mint (fresh or dried) or a fresh tomato and cucumber salad. It's also good reheated.
