Chicken Stew with Beer

Chicken in a delicious vegetable and beer sauce! Yummy, yum!
Ingredients
700g chicken meat (I used 6 boneless thighs)
1 red bell pepper
1 large onion
2 cloves garlic
1 chili pepper (optional)
1/2 can tomatoes (from 400g can)
1/2 bunch parsley
2 level teaspoons adobo (or 1 teaspoon dried oregano + 1/4 teaspoon ground cumin)
1 cup lager beer
3 tablespoons oil
salt
Servings: 3-4
How to prepare chicken stew with beer
- Blend in a food processor the onion, bell pepper, chili pepper, garlic, tomatoes and parsley until they become a paste.
* if you don't have a food processor, grind the vegetables in a meat grinder or grate them - Brown the chicken on both sides in hot oil. Remove the chicken to a plate.
- In its place, add the vegetable paste to the pot and sauté for 10 minutes.
- Put the chicken back in the pot and season the stew with adobo and salt to taste. Add the beer, stir well and let it simmer uncovered over medium heat for 15 minutes. Put the lid on the pot and cook over low heat for another 30 minutes.
- Serve hot with steamed rice, mashed potatoes or boiled potatoes.
