This is a traditional recipe in my family, we usually make it from the chicken breast taken from chicken soup along with the broth, it's much tastier that way.
Ingredients
1 boiled chicken breast (from soup; 250 g cooked meat)
300 ml chicken broth
4 garlic cloves
30 g flour
4 tablespoons oil
salt, black pepper
How to prepare chicken breast spread
- I put the boiled breast in a food processor to chop it a bit (a few pulses), but not too finely, so meat pieces remain, don't make it too fine. It works just as well to shred it by hand and then chop it a bit with a knife.
- Heat the oil in a pot and quickly sauté the crushed garlic cloves.
- Add the flour, stirring until it's absorbed by the oil. If desired, you can toast the flour a little.
- Gradually add the hot broth, stirring quickly with a whisk. Leave it on the heat for a few minutes, stirring all the time. When the sauce has thickened like sour cream, add the meat and stir. Let it boil together briefly. Season with salt and black pepper.
- Let it cool completely, the spread is better cold, plus it becomes spreadable. It's even better the next day.
