Recipe: Chicken Stifado (Greek-Style Chicken Stew)

This is a traditional Greek dish that can also be made with veal or rabbit. It's essentially a chicken stew traditionally made with pearl onions, but I make it with chopped yellow onion.

Ingredients

1 chicken, cut into pieces (or 10 chicken thighs)
salt, pepper
5 tablespoons olive oil
7 garlic cloves
3-4 bay leaves
chopped parsley
6 tablespoons water
1/2 cup tomato sauce (or 3 teaspoons tomato paste dissolved in water)
1 small onion (or pearl onions)
butter
boiled rice for serving

How to prepare chicken stifado (greek-style chicken stew)

  1. Fry the chicken pieces in olive oil with salt, pepper, and crushed garlic.
  2. When browned, transfer everything to a baking dish, add the bay leaves, sprinkle with parsley, and pour in the tomato sauce mixed with water.
  3. Finely chop the onion (or use whole pearl onions, just peeled), fry in butter, and pour over the chicken in the dish.
    *If you're in a hurry, you can just add the chopped onion to the dish without frying it in butter first - I've tried it this way and it turns out fine.
  4. Cover the dish tightly with aluminum foil and bake at 200°C for about one hour.
  5. Serve the chicken pieces alongside plain boiled rice with the delicious sauce from the pan poured over.
