Chicken Stifado (Greek-Style Chicken Stew)

This is a traditional Greek dish that can also be made with veal or rabbit. It's essentially a chicken stew traditionally made with pearl onions, but I make it with chopped yellow onion.
Ingredients
1 chicken, cut into pieces (or 10 chicken thighs)
salt, pepper
5 tablespoons olive oil
7 garlic cloves
3-4 bay leaves
chopped parsley
6 tablespoons water
1/2 cup tomato sauce (or 3 teaspoons tomato paste dissolved in water)
1 small onion (or pearl onions)
butter
boiled rice for serving
How to prepare chicken stifado (greek-style chicken stew)
- Fry the chicken pieces in olive oil with salt, pepper, and crushed garlic.
- When browned, transfer everything to a baking dish, add the bay leaves, sprinkle with parsley, and pour in the tomato sauce mixed with water.
- Finely chop the onion (or use whole pearl onions, just peeled), fry in butter, and pour over the chicken in the dish.
*If you're in a hurry, you can just add the chopped onion to the dish without frying it in butter first - I've tried it this way and it turns out fine. - Cover the dish tightly with aluminum foil and bake at 200°C for about one hour.
- Serve the chicken pieces alongside plain boiled rice with the delicious sauce from the pan poured over.
