Chickpea Salad with Avocado and Goat Cheese

This salad is delicious especially thanks to the addition of fresh herbs and lemon zest that brighten up the mix, and the goat cheese that brings creaminess. It's also very quick, on the table in 10 minutes.
Ingredients
250 g cooked chickpeas
50 g fresh goat cheese (creamy)
1 avocado
1 small red onion
1/2 bunch parsley
5 sprigs dill
zest from 1/2 small lemon
2 tablespoons lemon juice
1-2 tablespoons extra virgin olive oil
salt

How to prepare chickpea salad with avocado and goat cheese
- Chop the onion into small cubes. Put in a bowl and sprinkle with a little salt. Massage with your fingers for 15 seconds, just to soften it a bit.
- Add the chickpeas on top of the onion. Then add the finely chopped herbs and grate in the lemon zest.
- Crumble the cheese on top. Add the avocado cut into cubes. Squeeze the lemon juice over the avocado. Sprinkle again with a little salt.
- Drizzle everything with olive oil and mix. Adjust salt to taste. Serve immediately with cherry tomatoes or crispy Wasa bread, rustic/toasted bread or flatbread.
