Chickpea Tikka Masala with Baked Chicken

Tikka masala is one of the most beloved curry sauces. It is a creamy tomato-based curry. Special in this recipe is preparing the curry in the oven. While it cooks, the chicken pieces on top have time to brown nicely.
Ingredients
6 chicken drumsticks
500g cooked chickpeas (+ 50ml cooking water; or 2 cans of chickpeas of 400g)
1/2 tablespoon oil
salt, black pepper, turmeric
Tikka Masala
1 tablespoon butter
4 garlic cloves (medium)
2 teaspoons finely grated ginger (paste)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon sweet paprika
1/4 teaspoon turmeric
1/4 teaspoon chili flakes (or more if you want the food spicier)
1 small cinnamon stick (2-3 cm)
1 can of tomatoes 400g (or 400ml passata)
100ml sweet cream (20%)
salt

How to prepare chickpea tikka masala with baked chicken
- Dry the drumsticks with kitchen paper towels. Sprinkle with salt, ground black pepper and 1/4 teaspoon turmeric. Add the oil and massage to coat evenly with the spices.
- Drain the chickpeas and prepare 50ml of the cooking water (or 50ml liquid from the can).
- If the tomatoes are whole in the can, blend them in a food processor together with their juice.
- In a not too large pot, melt the butter. Add the crushed garlic and ginger paste. Sauté over low heat, 2-3 minutes, until it smells pleasant.
- Add the powdered spices (cumin, coriander, paprika, turmeric and chili) and mix to combine. Sauté the resulting paste for another minute.
- Add the pureed tomatoes (or passata), cinnamon, the 50ml chickpea water and salt. Bring to a boil and simmer, stirring often, for about 5 minutes.
- Add the cream and simmer for another 2 minutes. Adjust for salt.
- In a baking dish (heat-resistant) of approx 28cm diameter, spread the chickpeas on the bottom. Pour the tikka masala (tomato sauce) over them. Place the drumsticks on top. Grind a little more pepper over the drumsticks.
- Bake at 200C for 45 minutes. After 30 minutes, brush the drumsticks with sauce from the pan.
