Recipe: Cucumber Salad with Kefir Dressing

The new kefir dressing for all the delicious vegetables this summer. Fine and creamy, it contains only ingredients that your figure will love. Yesterday I put it over cucumbers, today over tomatoes and tomorrow on new cabbage.

Cucumber salad goes well alongside grilled chicken or pork or grilled halloumi cheese. It's also good on its own, just with a slice of toast.

Ingredients

6 garden cucumbers (not too small)
150 g kefir
1/2 ripe avocado
1/2 tablespoon lemon juice
1 tablespoon extra virgin olive oil
5 lovage leaves
1 sprig dill
lemon zest
salt

How to prepare cucumber salad with kefir dressing

  1. Peel the cucumbers, slice them and sprinkle with a little salt.
  2. In a food processor/stick blender, put the avocado and drizzle with lemon juice. Add the kefir, oil and a little salt. Blend until it becomes a smooth cream. Add the herbs and blend a few more times until they are chopped. Adjust salt to taste.
  3. Check the cucumbers and if they have released water, drain it. Add the dressing over the cucumbers and mix. Grate a little lemon zest (pass the grater over the peel about 5-6 times). Serve immediately. If the salad sits for more than 10 minutes, the cucumbers will release more water, in which case stir it again, the dressing will recover.
    * Do not prepare the salad long before serving because the avocado will oxidize and spoil the color, and the cucumbers will release too much water and dilute the dressing.
