Pasta Salad with Chicken Breast and Oranges

This salad is one I usually prepare for office parties and although it's a bit labor-intensive, it's worth it because it's always a hit.
Ingredients
250 g short pasta
1 chicken breast
1 bag (450 g) Mexican vegetable mix
mayonnaise (from one egg with oil and a little mustard)
1 small yogurt (200 g)
2 oranges
150 g salted roasted peanuts
salt, pepper
3 tablespoons butter
How to prepare pasta salad with chicken breast and oranges
- The pasta is boiled with salt; drain.
- The chicken breast is boiled with salt and cut into cubes.
- The Mexican vegetables are placed in boiling water and boiled for 1 minute
- The chicken cubes and vegetables are sautéed together in 3 tablespoons of butter. Season with salt and pepper. Add the vegetables and chicken over the pasta and let cool completely.
- While cooling, I made the mayonnaise and cut the orange flesh into cubes.
- When the salad has cooled, season again with salt and pepper. Add the mayonnaise mixed with yogurt, oranges, and peanuts over the salad. Mix well until combined. Keep refrigerated.
*Add the orange cubes and peanuts no more than 1 hour before serving, otherwise they will become soggy.
