A very refined salad that I found on an Italian website. The combination of sweet-tangy flavors is perfectly complemented by the aroma of basil. I think it's the most delicate and interesting salad I've ever made... and unusual for me. It can also be served very well as an appetizer or at a buffet.
Ingredients
3 slices eggplant
3 slices orange
3 teaspoons pesto
grated orange zest
salt
olive oil

How to prepare grilled eggplant salad with oranges and pesto
- Brush the eggplant slices with a little oil on both sides, season with salt, and grill for 2 minutes on each side.
- Peel the orange slices of the white pith and membrane.
- Assemble the salad as follows: one orange slice, place an eggplant slice on top and spread with a little pesto... repeat twice, with an eggplant slice on top spread with more pesto. Grate a little orange zest on top.
