Extra Spicy Chicken Wings
Ingredients
1kg chicken wings
1 teaspoon salt
1 teaspoon sweet paprika
1 teaspoon baking powder
1/2 teaspoon ground black pepper
Extra Spicy Sauce
3 chipotle peppers in adobo sauce + 1 tablespoon adobo sauce
1 heaping tablespoon butter
2 pinches ground cumin (or 1 teaspoon adobo seasoning)
1 tablespoon lime juice
How to prepare extra spicy chicken wings
- Wash the wings and pat them dry well with paper towels.
- Mix the seasonings and sprinkle over the wings. Massage the wings well so they are evenly seasoned.
* The baking powder is optional; it helps make the wings crispier - Arrange the wings in the baking pan with parchment paper underneath. A pan with a rack inside would be ideal, so the fat from the wings drains below. This way, the wings will be crispy on both sides. Refrigerate for 8 hours. (Important! Don't skip this step!) Do NOT cover the pan with anything!
- Preheat the oven to 240°C and place the wings in the oven on the middle rack. Roast for 30 minutes. Then, for a crispier crust, turn on the broiler (heat from above) and roast for another 5-10 minutes (watch them now so they don't burn).
* If your broiler can run together with the regular oven function (heat from below), you can turn it on after 20 minutes of baking and skip the additional 5-10 minutes. - The sauce: Blend all the sauce ingredients in a blender. Put the resulting paste in a small saucepan and heat until the butter is melted and the sauce is hot. Add a little water (about 50ml) so the sauce flows easily off a spoon, and bring to a simmer.
* If you want a less spicy sauce, remove the seeds from the chipotle peppers - While the wings are still hot, brush them with sauce. I only brushed the tops because the sauce is extra hot.
- Serve hot.
