Ingredients
1 kg chicken wings (tips removed)
salt, black pepper
Sweet and Spicy Glaze
35g butter
3 cloves garlic
1 teaspoon grated ginger (paste)
1 tablespoon soy sauce
60g hot pepper jam (about 3-4 tablespoons)
juice of 1 lime

How to prepare sweet and spicy chicken wings
- Cut the wings into their two segments. Season with salt and black pepper. Arrange in a baking tray in a single layer and bake at 200°C for 40-45 minutes (until fully cooked and lightly browned in places).
- Meanwhile, melt the butter in a skillet and when hot, add the crushed garlic and ginger. Sauté briefly, just until a pleasant aroma rises from the pan (about 30 seconds).
- Add the remaining ingredients and simmer the resulting sauce until it looks like caramel (you can see clear traces of the spoon on the bottom of the pan; about 1-2 minutes). Set the sauce aside until needed. Taste and if it's too sweet or not sweet enough, adjust the amount of lime juice or chili jam until you like it.
- When the wings are done, bring the sauce back to a simmer. Add the wings to the sauce, without pouring in the fat rendered from the meat.
- Cook everything, stirring until the wings are nicely glazed and the sauce has "stuck" to them (it doesn't take long, 1-2 minutes). At the end, the wings can be sprinkled with sesame seeds and green onion. They go well with sesame rice.
