Recipe: Sweet and Spicy Chicken Wings

Ingredients

1 kg chicken wings (tips removed)
salt, black pepper

Sweet and Spicy Glaze

35g butter
3 cloves garlic
1 teaspoon grated ginger (paste)
1 tablespoon soy sauce
60g hot pepper jam (about 3-4 tablespoons)
juice of 1 lime

How to prepare sweet and spicy chicken wings

  1. Cut the wings into their two segments. Season with salt and black pepper. Arrange in a baking tray in a single layer and bake at 200°C for 40-45 minutes (until fully cooked and lightly browned in places).
  2. Meanwhile, melt the butter in a skillet and when hot, add the crushed garlic and ginger. Sauté briefly, just until a pleasant aroma rises from the pan (about 30 seconds).
  3. Add the remaining ingredients and simmer the resulting sauce until it looks like caramel (you can see clear traces of the spoon on the bottom of the pan; about 1-2 minutes). Set the sauce aside until needed. Taste and if it's too sweet or not sweet enough, adjust the amount of lime juice or chili jam until you like it.
  4. When the wings are done, bring the sauce back to a simmer. Add the wings to the sauce, without pouring in the fat rendered from the meat.
  5. Cook everything, stirring until the wings are nicely glazed and the sauce has "stuck" to them (it doesn't take long, 1-2 minutes). At the end, the wings can be sprinkled with sesame seeds and green onion. They go well with sesame rice.
