Goat Cheese with Strawberries

A sophisticated combination. For me this is perfection... The coulis is so good that I recommend you "recycle" it and use it in other recipes too.
Ingredients
Goat Cheese Cream
100g fresh goat cheese
2 tablespoons powdered sugar
3 tablespoons milk
50ml heavy whipping cream
Strawberry Coulis
100g strawberries
1 generous tablespoon powdered sugar
1 large basil leaf
zest from 1/4 lemon
Assembly
6 strawberries
1 Oreo cookie
basil leaves

How to prepare goat cheese with strawberries
- Beat the goat cheese with sugar and milk until soft and creamy. Add the whipping cream beaten until it holds on the whisk. Fold gently. Can be kept refrigerated.
- Weigh the strawberries after removing the stems. Put them in a blender together with the rest of the ingredients. Blend until you get a puree. Pass the sauce through a fine sieve (like a tea strainer for example). Keep refrigerated.
- Assembly: place a pastry ring in the center of a plate; on the edge arrange strawberries cut in half (with the cut side facing outward). Fill the ring with half of the cheese cream and level with the back of a teaspoon; remove the ring; pour half the coulis around; sprinkle crumbled cookies on top and decorate with basil leaves.
