Strawberry and Goat Cheese Salad
Quick Recipes Simple Recipes Lacto-Ovo Vegetarian Recipes Salads
A new obsession every weekend. If last weekend I overindulged in yogurt with strawberries and granola, this weekend I had a new obsession at lunch - this fresh and refreshing salad. But it shows - I've practically become a salad hermit.
My greatest pleasure during this season is wandering through the farmers' market. I confess I go daily, during lunch break, sometimes just to feast my eyes. But my favorite market day is Saturday. The buzz is more intense. The colors on the stalls more vibrant. The eyes of vendors and buyers more alert. This Saturday my heart was stolen by a mountain of garden lettuce, exactly like the one that grows in my grandmother's garden. It's fresh, delicate, not grassy or watery at all. I also stopped by "my strawberry lady" - she didn't disappoint me this time either. That's how this salad was born, similar to one I ate on the island of Korcula.
There are a few other simple things I adore during this season:
- cooking with the kitchen windows wide open; this way I see the green of the little park in front and hear the rustling of neighbors
- walking for hours on Sundays through Faget forest; wild strawberries and wild thyme have just bloomed; the best way to disconnect
- putting white balsamic cream on everything; it's like a sweet syrup with very little acidity; it's delicate and so wonderful that it's suitable even for desserts; goes well with strawberries, peaches, on ice cream or chocolate mousse, in yogurt or fruit sorbet, etc.; it's also excellent on meat (in marinades) or in salads
- making elderflower cordial and sharing it with everyone
These are the small pleasures I treat myself to daily. What do you treat yourself to?
Ingredients
1 small head of lettuce (or 4 garden lettuces)
1 sprig green onion
7 large basil leaves
50 g fresh goat cheese
100 g strawberries
2 tablespoons almond flakes
2 tablespoons olive oil
1 tablespoon white balsamic cream
Servings: 1
How to prepare strawberry and goat cheese salad
- Toast the almond flakes in a pan without any fat until they slightly change color and become crunchy. Stir frequently.
- Wash the lettuce leaves and dry them well (either with paper towels or let them drain longer). Stack them on top of each other, roll like a cigar, and cut into strips. Put them in a bowl. Add the green onion sliced into rounds and the basil cut into strips on top. Sprinkle with a little salt and pour 1 tablespoon of oil. Gently mix everything.
- Crumble half the goat cheese on top.
- Remove the stems from the strawberries and slice into rounds. Arrange on top. Crumble the remaining cheese over them. Pour another 1 tablespoon of oil and the white balsamic cream.
- Top with crispy almond slices.
