Recipe: Grated Butter Cake with Jam

Shhh, we're secretly starting rehearsals for Christmas. I got this model from Starbucks, where this cake tempts me every time.

Just one note: depending on the jam/preserves you use, you can adjust the amount of sugar in the dough (the 80g powdered sugar). The amount is fine if you use a tart jam (like the sour cherry I used here), but if you choose a sweeter one (apricot, peach for example) you can significantly reduce the sugar in the dough.

Ingredients

200g butter 80% fat (at room temperature)
80g powdered sugar (can be store-bought or ground at home; can be vanilla flavored)
2 egg yolks
240g flour
1/2 teaspoon baking powder
200g jam or preserves (I used sour cherry)

How to prepare grated butter cake with jam

  1. Cream the butter with the sugar for 2 minutes using a mixer. Depending on the jam you use, the sugar can be vanilla flavored or you can add a little grated lemon/orange zest.
  2. Add the egg yolks one at a time and mix for another 30 seconds.
  3. Add the flour and baking powder (sifted together). Mix with a spoon until the dough is smooth.
  4. Divide the dough into two equal pieces, wrap in plastic wrap or a bag, and refrigerate (at least 4 hours or overnight).
  5. You can use a 20 cm diameter round pan or an 18 cm square pan (the pan can have removable sides). Grate half of the dough onto the bottom of the pan, distributing it evenly.
  6. Spread the jam over the dough, making sure to leave at least 1 cm free around the edges. Let the jam flow off the spoon onto the dough, then just level it with the back of the spoon.
  7. Grate the second piece of dough on top, again making sure to distribute it evenly.
  8. Bake the cake at 170°C for 35 minutes (until slightly golden on the edges).
  9. Let it cool completely, then you can cut it. It cuts much better if it sits for a few hours, allowing the dough and jam time to set so it won't crumble.
