Recipe: Layered Cake with Dried Plums

A cake with a truly impressive effect. I won't lie, it's quite expensive (many eggs, lots of butter) and high in calories (many eggs, lots of butter), but just look at it, how beautiful it looks... And this is my first time making it. In fact, you can see that after the first four bottom layers which were a bit wobbly (for the first one, the grill didn't even start due to a... handling error 😋), I started to gain control and the rest of the layers came out almost perfect. I can't wait to make it again!

Ingredients

450g butter at room temperature
100g sugar
2 packets vanilla sugar
1 vanilla pod
6 eggs
12 egg yolks
500ml sweetened condensed milk
220g all-purpose flour
20g starch
1/2 teaspoon salt
150g pitted dried plums

How to prepare layered cake with dried plums

  1. Cut the plums in half lengthwise and flatten them with the flat side of the knife.
  2. Preheat the oven to 230°C. Line a 20x24cm baking pan (minimum 4cm height) with parchment paper on the bottom.
  3. With a mixer, cream the butter with sugar and vanilla bean seeds until the sugar is almost dissolved.
  4. Add the eggs one at a time, mixing well after each addition until incorporated.
  5. Add the condensed milk and mix well until incorporated.
  6. Add the flour, starch, and salt and mix until the batter is smooth. Prepare a measuring cup to measure the batter. For even layers, you need to pour the same amount of batter for each.
  7. Place the pan in the oven to preheat. Turn off the oven and turn on the grill/broiler to maximum (200°C). Let both the grill and pan heat for 2 minutes.
  8. Remove the pan from the oven. Pour 160ml of batter, level it with the back of a spoon, then tap the pan firmly on the counter to spread the batter evenly.
  9. Place the pan under the grill (on the third rack from the top). Broil for 5-7 minutes until golden brown all over. If the batter seems to bake unevenly under the grill, rotate the pan halfway through.
  10. Remove the pan from the oven and with a flat-bottomed vessel (covered with aluminum foil), press the baked layer firmly to release the air. The batter may puff up in some places, that's fine, just press firmly in those areas to deflate.
  11. Pour another 160ml of batter over the baked layer, level, tap on the counter, then place plum slices here and there. Broil for 5-7 minutes until nicely browned.
  12. Repeat steps 8-11 until you finish the batter or fill the pan. I got 8 layers.
  13. After broiling the last layer, turn off the grill and turn on the oven to 180°C. Let the cake bake for another 10 minutes.
  14. Remove the cake from the oven. Run a knife around the edge of the cake to loosen it from the pan. Let it cool completely.
  15. Flip the cake onto the bottom of a baking pan. Remove the parchment paper. Flip again onto a serving platter. Slice the cake.
