Lettuce Soup with Bacon and Egg

If lettuce soup doesn't appeal to you, you can make a spinach soup instead, following the same procedure but replacing the lettuce with spinach.
Ingredients
2 heads of lettuce
1 onion
1 celery stalk
150 g smoked bacon
200 g sour cream
2 bouillon cubes
2 garlic cloves
2 eggs
salt, pepper
How to prepare lettuce soup with bacon and egg
- Sauté the chopped onion and celery in a little oil until softened, then add 1.5 liters of water and the bouillon cubes. Let it simmer on medium heat.
- Meanwhile, fry the sliced and scored bacon, without oil, until it becomes crispy.
- In the fat left by the bacon, make an omelet from 2 eggs beaten with a little salt.
- Add the bacon to the soup and let it cook for 10 more minutes.
- Then add the cleaned lettuce cut into thin strips and let it cook for about 10 minutes. Season with salt and pepper.
- Dissolve the sour cream with hot soup and slowly pour it into the soup while stirring continuously. Add the crushed garlic. Let it boil a few more times.
- At the end, add the omelet cut into cubes.
