Recipe: Lettuce Soup with Bacon and Egg

If lettuce soup doesn't appeal to you, you can make a spinach soup instead, following the same procedure but replacing the lettuce with spinach.

Ingredients

2 heads of lettuce
1 onion
1 celery stalk
150 g smoked bacon
200 g sour cream
2 bouillon cubes
2 garlic cloves
2 eggs
salt, pepper

How to prepare lettuce soup with bacon and egg

  1. Sauté the chopped onion and celery in a little oil until softened, then add 1.5 liters of water and the bouillon cubes. Let it simmer on medium heat.
  2. Meanwhile, fry the sliced and scored bacon, without oil, until it becomes crispy.
  3. In the fat left by the bacon, make an omelet from 2 eggs beaten with a little salt.
  4. Add the bacon to the soup and let it cook for 10 more minutes.
  5. Then add the cleaned lettuce cut into thin strips and let it cook for about 10 minutes. Season with salt and pepper.
  6. Dissolve the sour cream with hot soup and slowly pour it into the soup while stirring continuously. Add the crushed garlic. Let it boil a few more times.
  7. At the end, add the omelet cut into cubes.
