Bean Soup with Lovage
I prepared this soup to test my vegetable and herb mix that I put away for winter. It turned out really good, and more diet-friendly than the bean soup I usually prepare. If you don't like lovage you can replace it with tarragon.
Ingredients
600g beans
250g smoked meat (optional)
1 large carrot
1 parsley root
1 medium onion
1 small bell pepper
1 ripe tomato
1 teaspoon tomato paste
1/2 bunch lovage
a few sprigs of parsley
How to prepare bean soup with lovage
- Cut the smoked meat (bacon, ham etc.) into large pieces and put it to boil with water. Let it cook for half an hour.
- Add the beans and continue boiling until the beans are almost cooked. I used fresh beans from the market, so it only took 1/2 hour.
- I removed the smoked meat from the pot and cut it into small pieces. I then put it back in the pot.
- I chopped the onion and grated the carrot and parsley root and added them over the beans and let them cook for another 15 minutes.
- I chopped the rest of the ingredients and put them in the soup and cooked for another 10 minutes. At this step I actually used a portion of my soup mix plus a teaspoon of tomato paste that I dissolved with a little soup before adding it to the pot.
