Recipe: Bean Soup with Lovage

I prepared this soup to test my vegetable and herb mix that I put away for winter. It turned out really good, and more diet-friendly than the bean soup I usually prepare. If you don't like lovage you can replace it with tarragon.

Ingredients

600g beans
250g smoked meat (optional)
1 large carrot
1 parsley root
1 medium onion
1 small bell pepper
1 ripe tomato
1 teaspoon tomato paste
1/2 bunch lovage
a few sprigs of parsley

How to prepare bean soup with lovage

  1. Cut the smoked meat (bacon, ham etc.) into large pieces and put it to boil with water. Let it cook for half an hour.
  2. Add the beans and continue boiling until the beans are almost cooked. I used fresh beans from the market, so it only took 1/2 hour.
  3. I removed the smoked meat from the pot and cut it into small pieces. I then put it back in the pot.
  4. I chopped the onion and grated the carrot and parsley root and added them over the beans and let them cook for another 15 minutes.
  5. I chopped the rest of the ingredients and put them in the soup and cooked for another 10 minutes. At this step I actually used a portion of my soup mix plus a teaspoon of tomato paste that I dissolved with a little soup before adding it to the pot.
