Recipe: Mediterranean Salad

Made exclusively from leftovers in the fridge. I used almost all the ingredients in meals from previous days, and since I had a little bit of each left over, I prepared this quick and tasty salad. The feta was made from goat's milk and paired wonderfully with the rest of the flavors.

Ingredients

200g feta cheese
7 sun-dried tomatoes in olive oil
10 black olives
3 sprigs of dill
3 sprigs of parsley
2 green onions
3-4 tablespoons olive oil
pepper

Servings: 2-3

How to prepare mediterranean salad

  1. Dice the feta into cubes. Finely chop the tomatoes, olives, green onion, and herbs.
  2. Mix everything together, season with pepper, then add the olive oil. Toss before serving.
  3. Serve with salted crackers or pieces of flatbread.
