Made exclusively from leftovers in the fridge. I used almost all the ingredients in meals from previous days, and since I had a little bit of each left over, I prepared this quick and tasty salad. The feta was made from goat's milk and paired wonderfully with the rest of the flavors.
Ingredients
200g feta cheese
7 sun-dried tomatoes in olive oil
10 black olives
3 sprigs of dill
3 sprigs of parsley
2 green onions
3-4 tablespoons olive oil
pepper
Servings: 2-3
How to prepare mediterranean salad
- Dice the feta into cubes. Finely chop the tomatoes, olives, green onion, and herbs.
- Mix everything together, season with pepper, then add the olive oil. Toss before serving.
- Serve with salted crackers or pieces of flatbread.
