Feta Cheese Dip with Roasted Peppers

Yesterday I didn't cook, I just mixed things from the fridge. I started with two roasted peppers left over from ajvar and feta cheese, which has lately become a staple in our fridge. It turned into a creamy and aromatic spread.
Ingredients
300g feta cheese
2 roasted red peppers
2 cloves garlic
3 tablespoons sour cream (or yogurt)
3 sprigs dill
1/4 bunch parsley
3 tablespoons olive oil
How to prepare feta cheese dip with roasted peppers
- In a bowl, put the crushed garlic and rub it well with a pestle, slowly adding a tablespoon of oil, until it becomes a paste.
- Add the feta and continue to crush until it also becomes a paste. Add the rest of the oil and incorporate well.
- Add the sour cream (or yogurt), one tablespoon at a time, until the spread becomes creamy. You can add more sour cream if you want a softer spread.
- Add the finely chopped herbs and 1 1/2 roasted peppers cut into small cubes.
- Place the spread in a bowl, sprinkle the remaining roasted pepper (also cut into small cubes) on top. Decorate with some herbs.
- Refrigerate for about 1 hour.
- Serve with toasted bread or corn chips.
