Motesti-Style Cheese Flatbreads

Motesti-style flatbreads like at Cabana Motilor from Marisel. They are filled with fresh sheep cheese and served with sour cream and blueberry jam.
Ingredients
Dough
500g all-purpose flour
300ml warm milk
1 egg at room temperature
1 packet dry yeast (or 25g fresh yeast)
1/2 teaspoon salt
1 heaping teaspoon sugar
For filling and brushing
250g fresh sheep cheese (cas)
2 tablespoons sour cream
2 tablespoons sugar
1/2 cup oil (or melted lard)
For serving
sour cream
blueberry jam (or another tart jam)

How to prepare motesti-style cheese flatbreads
- Place the milk with beaten egg, yeast, and sugar in the bread machine bowl. Add the flour on top and sprinkle with salt. Set the machine to the kneading and rising program.
* the dough can also be kneaded by hand, then left covered to rise in a warm place for 1 hour. - While the dough is rising, grate the cheese. Mix the sour cream with sugar.
- When the dough has risen, remove it from the bowl and place on a floured work surface.
Cut the dough into 10 equal pieces. - Roll each piece into a thin sheet.
- Sprinkle grated cheese on one sheet, then cover with another sheet. Cut around the edges with a pastry wheel. This way the edges will seal. Check them and if they are not well sealed, press lightly with your fingers.
- Place the formed flatbreads on a clean towel and brush the tops with oil. In the end you will have 5 flatbreads.
- Heat a non-stick (or cast iron) pan very well over high heat. Then reduce to medium heat. Place as many flatbreads as fit in the pan, with the oiled side down. Fry the flatbread until golden (about 2 minutes). If it puffs up, poke the top with a fork in a few places. While cooking on the first side, brush the flatbread with oil on the second side. Flip the flatbread and cook on the second side as well.
- Remove the flatbread from the pan and brush the top with sweetened sour cream.
- Stack the flatbreads on top of each other when you finish cooking them.
- Serve the flatbreads warm with blueberry jam and sour cream.
