Crushed Onion Salad
Do you like bean soup with onion? Me too 😊 But when the onion is sharp (especially white onion) I cannot eat it raw. Then I use a method to "sweeten" it, to eliminate the sharpness: beating it with salt. It is a method I learned when I was very young. I remember that back then we used a towel, but I like the bag method better - no smells linger in the kitchen or on hands. The method works on red onion too. The onion becomes so sweet and soft that you can literally eat it plain.
Onion prepared this way can be served as is, added to hamburgers, sandwiches, or salads.
Ingredients
1 large onion (white or red)
1/4 teaspoon salt
ground black pepper
1/2 tablespoon oil
1 sprig of parsley (optional)
How to prepare crushed onion salad
- Chop the onion into small cubes. Put it in a sturdy bag (I use a zip-bag type) and add the salt.
- Push the air out of the bag, close it and start beating the onion with the flat of your palm. Do this until you see liquid collecting in the bag and the onion becomes translucent (about 2 minutes).
- Let the onion sit for 10 minutes.
- Make a few holes in a corner of the bag (with a toothpick) and squeeze the bag like a bundle. You will see liquid starting to flow from the bag. Squeeze until not much more comes out.
- Dump the onion from the bag directly into the salad bowl. Add a little ground pepper and the oil. Mix. If you want some color, add chopped parsley.
- Serve immediately.
The crushed onion sits for 10 minutes
