1 tablespoon butter (about 20g)

How to prepare pasta with salmon and asparagus

  1. Put the pasta to boil in plenty of salted water according to the package instructions.
  2. Cut the asparagus into appropriate segments, leaving the tips whole. Add to the pot with the pasta when it's cooked and leave for just 30 seconds, then drain everything.
  3. Cut the salmon into cubes of about 1.5 cm after removing the skin.
  4. In a wide pan, heat the oil. Add the salmon cubes and fry just until they change color all over. Remove to a bowl.
  5. Add the butter to the pan and let it melt. Add the crushed garlic and finely chopped anchovies and saute for 30 seconds.
  6. Add the tomato paste and saute for another 30 seconds.
  7. Add the drained pasta and asparagus and saute for 3 minutes, stirring constantly, until the pasta absorbs the sauce from the pan.
  8. Flake the salmon into strips and add it over the pasta along with the chopped herbs. Add salt to taste and stir well for another minute.
