How to prepare pasta with salmon and asparagus
- Put the pasta to boil in plenty of salted water according to the package instructions.
- Cut the asparagus into appropriate segments, leaving the tips whole. Add to the pot with the pasta when it's cooked and leave for just 30 seconds, then drain everything.
- Cut the salmon into cubes of about 1.5 cm after removing the skin.
- In a wide pan, heat the oil. Add the salmon cubes and fry just until they change color all over. Remove to a bowl.
- Add the butter to the pan and let it melt. Add the crushed garlic and finely chopped anchovies and saute for 30 seconds.
- Add the tomato paste and saute for another 30 seconds.
- Add the drained pasta and asparagus and saute for 3 minutes, stirring constantly, until the pasta absorbs the sauce from the pan.
- Flake the salmon into strips and add it over the pasta along with the chopped herbs. Add salt to taste and stir well for another minute.
