Pasta with Zucchini Cream

Finally home! How good is food made with your own hands! To get back into rhythm, I started with a simple recipe that will surely please those who appreciate noodles with cabbage. You can also use the zucchini cream for sandwiches.
Ingredients
700g zucchini (2 zucchinis)
1 large onion
200-250g short pasta (or wide noodles)
2 tablespoons oil
salt, pepper
Servings: 2-3
How to prepare pasta with zucchini cream
- Grate the zucchini. Chop the onion.
- Heat the oil in a wide pan and sauté the onion until soft. Add the zucchini and cook until very soft, about 20-25 minutes. In the first 10 minutes they will be more watery and you can cook them over medium heat stirring occasionally, but after the water evaporates, lower the heat to almost low so they don't burn. When cooked, season with salt and pepper to taste (I added more pepper, about 1/4 teaspoon, to balance the sweetness of the zucchini).
- Meanwhile, cook the pasta in salted water according to the package instructions. Reserve 100ml of the pasta cooking water.
- Blend the zucchini in a food processor until creamy. Put the cream back in the pan and add the pasta water. Stir.
- Add the drained pasta over the zucchini cream and mix. Adjust salt.
- Serve sprinkled with pepper or parmesan.
