Recipe: Beer-Battered Zucchini

Crispy on the outside, soft and sweet on the inside. My recommendation is to pair them with a cold beer.

Ingredients

2 small zucchini
a few tablespoons of flour
plenty of oil for frying
salt, pepper

Batter

150g all-purpose flour
200 ml lager beer
1 small egg
1 pinch baking powder
salt

How to prepare beer-battered zucchini

  1. Slice the zucchini neither too thin nor too thick. Sprinkle with salt on both sides and place on paper towels to drain. Season with pepper.
  2. Prepare the batter: make a well in the center of the flour and add the beaten egg, baking powder and 1/4 teaspoon salt. Start pouring the beer while whisking at the same time. Mix well until you finish the beer and the batter is smooth. You'll get a batter similar to crepe batter.
  3. Heat plenty of oil in a frying pan until very hot. Then reduce the heat to low.
  4. Dredge the zucchini slices in flour, then dip in batter and place them in the oil, being careful not to splash yourself. The slices should sizzle loudly as soon as they hit the oil.
    * fry in batches, don't crowd the zucchini in the pan.
  5. Brown them nicely on both sides, then remove with a slotted spoon onto paper towels to absorb the excess oil. Sprinkle salt over the battered zucchini.
  6. Serve immediately, with garlic sauce or tzatziki.
