Pea and Feta Curry

By making these two recipes today, you won't feel guilty - they're healthy dishes full of vitamins.
The first is today's recipe, a light and delicate curry. It contains peas full of vitamin C, K, magnesium, B-complex, iron and fiber. The second is a broccoli soufflé. The broccoli used there provides almost twice your daily dose of vitamin C, and using cottage cheese not only makes the soufflé light, but is an important source of calcium. The same goes for the feta used in this curry.
Ingredients
300g peas (I used frozen)
300g lightly salted feta cheese
100g passata (or 2 canned tomatoes blended with a little of their juice)
2-3 tablespoons yogurt
3 tablespoons oil
salt
Paste
2 onions
3 garlic cloves
1 piece of ginger (2cm)
1 bay leaf
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
1/4 teaspoon black peppercorns
1/4 teaspoon Kashmiri chili (or chili to taste; or add a bit of hot pepper)
1 green cardamom pod
3 cloves
1 good pinch of ground cinnamon
Servings: 3
How to prepare pea and feta curry
- Put the onion cut into large pieces, peeled garlic, ginger pieces, bay leaf torn into bits and the spices in a food processor. Blend well for 1 minute until you get a fine paste. If the processor can't mix properly, add 2 tablespoons of water and continue blending.
- Add the paste to hot oil and sauté over low heat, stirring occasionally, until it looks dry (takes about 10 minutes).
- Add the passata and sauté for another 3 minutes - you'll see the oil separating at the edges.
- Add 250ml water and bring to a boil. Simmer covered for 5 minutes.
- Add the cubed feta and frozen peas, stir and simmer covered over low heat for another 15 minutes. Remove the lid, adjust salt if needed and continue cooking for 5 more minutes to reduce the sauce slightly.
- Add the yogurt, mix well and cook for 2-3 more minutes without letting it boil.
