Recipe: Peas in Cream Sauce

A recipe that will save you when you come home late and don't have much time to prepare dinner. You can serve it with some fried kabanos or salami if you want to beat the record for the fastest warm homemade dinner.

Ingredients

1 can of peas (400g)
1 onion
125 ml hot milk
1 heaping tablespoon flour
2 full tablespoons sour cream
5 tablespoons oil
salt, pepper

Servings: 2-3

How to prepare peas in cream sauce

  1. Drain the peas but reserve 125 ml of the liquid for the sauce.
  2. Grate the onion using a coarse grater and sauté in hot oil until softened.
  3. Add the flour and stir with a whisk until the oil is absorbed and the flour becomes paste-like. If desired, you can let the flour toast for 1 minute, but stir continuously.
  4. Add the hot milk slowly, as you would for mayonnaise, and continue stirring until it thickens slightly. When you've finished adding the milk, add the reserved pea liquid and mix well.
  5. Add the peas, salt to taste, and plenty of pepper (you can use white pepper if you want the sauce to stay perfectly white) and let them cook together for about 2 minutes, until the peas are heated through.
  6. Add the sour cream and cook for another 1-2 minutes.
