Pizza-Style Potato Rounds

Something très sympa for kids. These mini pizzas are very quick and easy to make. We, the "kids" at e-retete, devoured them with a beer. You can also top the potatoes with other combinations or use sweet potatoes.
Ingredients
4 medium potatoes (as round as possible)
3-4 thin bacon slices
a few tablespoons tomato basil sauce (store-bought - I like Panzani tomato basil sauce - or homemade)
50g cheese that melts easily (cheddar or mozzarella)
seasoned parmesan
2 tablespoons oil
salt, black pepper
How to prepare pizza-style potato rounds
- Wash the potatoes well with a rough sponge under running water. Cut into rounds about 1/2 cm thick (you can use a mandoline slicer to get even thickness, so they cook evenly).
- Arrange the rounds on a baking tray lined with parchment paper. Leave a little space between the rounds. Sprinkle with salt, black pepper, then brush each slice with a little oil.
- Bake at 200°C for 15-20 minutes, until the rounds are completely cooked. Flip the rounds halfway through baking.
- In a pan without added fat, fry the bacon slices on both sides until nicely browned. Cut into cubes.
Grate the cheese on a fine grater. - Remove the tray from the oven and spread each potato with about 1/2 teaspoon of tomato sauce. If you want them spicy, you can also add some ground hot pepper in oil or chili flakes. Place a small mound of grated cheese in the center. Sprinkle the bacon pieces on top. Sprinkle with seasoned parmesan (or plain parmesan and a little finely chopped parsley). Grind black pepper.
- Put the tray back in the oven, this time set to grill (heat from above; at 220°C) for a few minutes, just until the cheese is melted.
- They are best served immediately, but they're still good when cooled or can be reheated.
