Potato and Broccoli Soup with Sausage

Affordable and comforting, I prepared this soup in just over 30 minutes.
Ingredients
1 onion
1 garlic clove (optional)
50g smoked country sausages
500g starchy potatoes
1/2 head broccoli (about 300g)
4 sprigs dill
10 mint leaves
salt, pepper
1 tablespoon oil

How to prepare potato and broccoli soup with sausage
- In the hot oil, saute the finely chopped onion until very soft. Add the sliced sausages and fry them too. If the sausages have a lot of garlic (taste and see if the garlic flavor is strong), do not add garlic to the soup. Otherwise, add 1 crushed clove over the onion and sausages and saute for 1 minute.
- Add the peeled potatoes cut into cubes and 4 1/2 cups of water. Season with salt and pepper.
- Bring the pot to a boil and simmer with the lid on for 10 minutes. Check the potatoes - they should be almost done.
- Add the broccoli broken into small florets and bring to a boil. Simmer with the lid on for another 10 minutes.
- Remove half of the pot contents (be careful not to take the sausages) and blend until it becomes a smooth cream soup. Put this cream soup back in the pot. Adjust salt to taste.
- Add the finely chopped herbs.
