Recipe: Potato and Broccoli Soup with Sausage

Affordable and comforting, I prepared this soup in just over 30 minutes.

Ingredients

1 onion
1 garlic clove (optional)
50g smoked country sausages
500g starchy potatoes
1/2 head broccoli (about 300g)
4 sprigs dill
10 mint leaves
salt, pepper
1 tablespoon oil

How to prepare potato and broccoli soup with sausage

  1. In the hot oil, saute the finely chopped onion until very soft. Add the sliced sausages and fry them too. If the sausages have a lot of garlic (taste and see if the garlic flavor is strong), do not add garlic to the soup. Otherwise, add 1 crushed clove over the onion and sausages and saute for 1 minute.
  2. Add the peeled potatoes cut into cubes and 4 1/2 cups of water. Season with salt and pepper.
  3. Bring the pot to a boil and simmer with the lid on for 10 minutes. Check the potatoes - they should be almost done.
  4. Add the broccoli broken into small florets and bring to a boil. Simmer with the lid on for another 10 minutes.
  5. Remove half of the pot contents (be careful not to take the sausages) and blend until it becomes a smooth cream soup. Put this cream soup back in the pot. Adjust salt to taste.
  6. Add the finely chopped herbs.
