Recipe: Potato Stew with Smoked Ribs

Can you smell the Transylvanian cooking? The aroma of smoked meat, peppers and bay leaves has invaded not just my apartment, but the entire building.

Ingredients

1.5 kg starchy potatoes
300 g smoked ribs
1 large onion
1 red bell pepper
2 teaspoons sweet paprika
1 pinch hot paprika
3 bay leaves
1/2 bunch parsley
1 tablespoon oil
salt, black pepper

How to prepare potato stew with smoked ribs

  1. Cut the ribs into individual pieces (between the bones). Fry them in hot oil until lightly browned on all sides and they release some of their fat. Remove to a plate.
  2. In the remaining fat, add the finely chopped onion and pepper. Sauté over low heat for 10 minutes, until very soft.
  3. Remove the pot from the heat and add the bay leaves, paprika and black pepper. Mix well.
  4. Put the ribs back in the pot, add salt to taste and cover with 1.5 l of water. Bring to a boil. Simmer covered for 1 hour (or until you test a rib with a fork and the meat falls off the bone easily).
  5. Add the peeled and cubed potatoes. There should be enough water in the pot to cover the potatoes. If there isn't enough, add a little hot water to cover them.
  6. Bring to a boil. Simmer uncovered for 20-30 minutes (until the potatoes are done).
  7. Add the finely chopped parsley. Let it rest for a few hours and the sauce will thicken. It's even better after a few hours or reheated.
