Potato Stew with Chorizo and Lovage

A Spanish-inspired stew with a bit of local flavor, lovage. I wonder if the Spanish know how well their chorizo goes with lovage?
Ingredients
1 kg starchy white potatoes
1 medium kapia pepper
1 small light green pepper
1 medium onion
1 tablespoon pepper paste
1 bay leaf
100 g chorizo sausage (can be spicy)
75 ml dry white wine
4 sprigs of parsley
1 sprig of lovage
2 tablespoons oil
salt, black pepper

How to prepare potato stew with chorizo and lovage
- Peel the potatoes and cut into cubes or break into pieces (take each potato and insert the tip of the knife into the middle; make an incision, then with your hand break the potato at that spot; repeat with the broken pieces until you have pieces of the right size for stews).
- Dice the peppers and onion. Sauté in hot oil until soft (about 5 minutes).
- Add the chorizo sliced and sauté everything for another 5 minutes, stirring occasionally.
- Add the pepper paste and bay leaf and sauté for another 2 minutes.
- Deglaze with wine and let it boil just a few times, to evaporate some alcohol.
- Add the potatoes, sprinkle with salt and grind black pepper. Add water just enough to almost cover the potatoes (about 500 ml).
- Bring the stew to a boil, lower the heat and simmer until the potatoes are completely cooked (about 20-25 minutes). Add the chopped herbs, turn off the heat and cover with a lid. The stew is better if it sits for a while and it will also thicken. It's good reheated.
